Quick & Easy Chili #Recipe Under 30 Minutes Perfect for Weeknights Or Barbecues!

Spring and summertime means barbecue weather and I haven’t met a barbecue that didn’t include a good chili recipe! Have you? Chili can also be quick and easy to make who says it has to cook all day to taste amazing? Yes, you have to give it time for the flavors to marry. But, with that said this recipe gives you great results in a short  amount of time. This really is a chili recipe that is perfect anytime!

Now I’m not pulling your leg here! This recipe has come onto the plates of some of the pickiest palates in town. Not easy to please eaters no problem. Not too spicy, not too sweet just right for wrangling up the bunch and serving  at your spring or summertime barbecues! Or really anytime you need a quick and easy dinner solution!

This Chili Recipe isn’t just for Chili Mac. You can spin it several ways! Just Chili, Chili Mac (by adding macaroni noodles) Chili Mac Spaghetti (by adding spaghetti noodles, I like to use whole wheat ones) Nachos (because what kid doesn’t like Nachos?)

Toss in condiments like sour cream, shredded cheese or spice it up with jalapenos. You’ll be making this dish over and over again! Here’s what you need and how to cook it up. This recipe can be whipped up in under 30 minutes!

Ingredients for the Chili Recipe;

The veggies:

  • 1 yellow onion
  • 1 red bell pepper
  • 1/2-1 jalapeno (depends how hot you like things, I use half when serving to kids)

The spices:

  • 1/4 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp cayenne

The canned food items:

  • 1 can chili beans open and drained
  • 1 can kidney beans open and drained

The hero:

  • “Ragú® Old World Style® Traditional Sauce”

The meat:

  • 1 1/4 lb. lean or extra lean ground beef

Other items:

  • Olive oil
  • Whole Wheat Spaghetti Noodles or macaroni noodles if you prefer
  • optional-corn chips
  • optional -sharp cheddar cheese

We’ve been getting so busy around here that I recently decided to buy some frozen foods to try. Typically that isn’t how it is for us. I was rather surprised how good the meal tasted and loved the convenience. Sometimes you just need to have easy an easy recipe solution! Now, I know that I’ll be branching out and trying a few other brands to see what other easy and convenient options that I wouldn’t mind trying.  But, first let me tell you about Old El Paso which made a perfect quick and easy meal solution.

  • It was easy! Just pull fajitas out of the package and heat in a non stick pan!
  • Heat the Chicken enchiladas in the pan provided after peeling back the plastic a bit.
  • Heat your own tortillas in microwave
  • Shred your own cheese
  • Add Chicken fajitas to tortilla, top with shredded cheese fold up and serve. Top with sour cream if desired.
  • And enjoy by adding your favorite veggies. We had Salad!

The fajitas are ready in 15 min. The enchiladas in about 25. While they are cooking make your green salad.

Easy Dinner Recipe Round-Up & Meal Planning Ideas

I thought I would share my recipe round-up. I made it easy to view & find them. I have been trying new recipes weekly & sharing them on my other site each week. I haven’t shared recipes in awhile & I thought it was time I shared them with you. Some of you might enjoy cooking, others might just need an easy recipe or some meal plan ideas. Which ever catagory you fall into I hope my list helps you!

& if you have a recipe that is your favorite just add it to the list for me to try & I will share it when I do!

We try to have family dinner nightly with the exception of one night out a week. Meal planning can get quite repetative & that is why I decided to start searching out new recipes to try. Then I decided others must have the same problems I have. Making the same easy recipes over & over. Today here is one recipe & the round-up! I hope you enjoy this recipe &  find a few others to break up your weeknight meal plan hum drums.

One of my newest recent favorites is this recipe from Rachel Ray Magazine that I adapted slightly! She calls it a stew I call it a soup. She used her ground meat crumbled. I made mine in mini meatballs.You’ll be sure to call it yummy! Sorry the meatball soup isn’t the best photo as it was late in the evening when I took it with my iPhone & not my camera, but you get the idea. The Chicken Tortilla Soup is a family favorite & is number 5 on the meal plan with an easy click, print save options! Enjoy!!

MeatBall Barley Soup  (Printable Recipe PDF)

1 pound lean ground beef made into tiny meatballs  (with half the chopped onion & 1 minced garlic mixed together)
1 onion, finely chopped
2 cloves garlic, minced
1 chopped jalapeno or other chili pepper (optional)
1 14 1/2 ounce can diced fire-roasted tomatoes
1 teaspoon oregano
32 oz. beef broth
3 carrots, peeled and cut into 1/2-inch rounds
3 ribs celery, sliced
1/2 cup pearl barley
1/2 cup chopped flat-leaf parsley
Salt and pepper to taste

Chop all veggies. Then in a bowl take half the onion & garlic (prechopped) and make into mini meatballs. Brown slowly in olive oil. When browned on all sides add the rest of the garlic & onion into pan. Stir & cook until slightly clear. Then add in beef broth & all the rest of the vegetables, can of fire roasted tomatos then seasonings (reserve barley to last 30min). Simmer stirring occasionally for at least 30 min. Add in barley Cook an additional 30-45min. or until barley is tender.
